The Worshipful Company of Brewers, Part XVIII: Adam Young

The Worshipful Company of Brewers is once again upon us. The charter of this sanctified league dictates that each member of the Brooklyn Brewery brewing team will design and create a batch of his or her own draft-only beer, to be served exclusively at the Brewery Tasting Room until the last drop has been squeezed from the taps.

Beer #18: Dinginator
History: Doppelbocks traditionally end in “-ator” as a tribute to Salvator (Latin for “Savior,” the first doppelbock brewed by the Franciscan monks of St. Francis of Paula in the 17th century.
Style: Doppelbock (weren’t you listening?) with a traditional decoction mash
ABV: 7.7%
Notes: Smooth but powerful, with an abundance of dark fruit, caramel, banana, and hint of spice.
Availability: Friday, December 8 until it’s gone.

Alternate Title: Chief Dingus (remember, you only roast the ones you love)
Brewer’s Notes: Part of doppelbock lore is the decoction mash, which involves boiling a portion of the mash and reintroducing it to the whole to raise the collective temperature. Modern brewing has made this a largely unnecessary step, but like music on vinyl, some parts of the old ways can’t be beat. Of course, our brewhouse doesn’t have a decoction vessel…but that didn’t stop Adam. Take the Dinginator in hand and behold the strength and grace of this age-old style. Just be careful while you’re drinking; if you say something dumb, Adam is the one who’s going to call you out.
